When I download windows live photo gallery and live mail, they just install
along side the non live versions of these programs that came with Vista. How
do I remove these non live versions of photo gallery and mail, or reinstall
the live versions over the top of them?

you cannot remove the ones that came with vista, since they are an intragal
part of vista.
