I tend to write normally now. When I first started, it was tempting to be slow and take my time. The recognition is better to just write. Can it recognize a doctor's handwriting? This may depend more on the dictionary and that the words are understood in the context the doctor is writing. In addition, it is not always necessary to convert handwriting. Sometimes it is best to just leave the notes as notes ...

Would I be able to go to a retailer like Best Buy and open up a certain program and see if it can learn mine? What program would I use?

The TIP (tablet pc input panel) is not trainable. The software is designed to recognize multi-strokes - and it therefore it is not like a PDA that has to be taught your strokes.
To see the Tablet PC in action, ask one of the clerks to remove it from the shelf. You may also have to ask them for the pen. Don't plan on doing this when the clerk has 10 people waiting ... ;-)
Open notepad and use the TIP. Open Word and see the TIP in action. If OneNote is installed then give it a try.
Good luck and let us know how the handwriting feels for you after you've given it a try!
