Can someone help me out here.

I've got a new HTC S710 today (nice phone, so far), there is no data service
with it, work are cheap.

On my last phone, the Wizard, I connect over bluetooth to my own Sony (has
data tarriff) and it worked fine. Am I missing a setting somewhere?

Did you connect via a Bluetooth Dial Up networking connection? The
Bluetooth DUN profile was removed WM5 AKU v3 and higher, including
WM6.

I believe its being brought back in a CAB file distro, very cool that
the Windows Mobile team isn't bundling it in an AKU update.
