Using One Note to Teach Students In Orange County Florida

I would love to be able to use one note to capture the audio and screen
capture as a video while I am teaching my class live so it can be saved and
shown at later date or downloaded to their video players for study at home.
It has a video feature, but requires a camera, can't they just allow you to
capture what you are typing and writing with the audio connected. If you can
get it to do this, you will have the best product to teach students all over
the world and increase the level of learning substantially.

Sorry, NO. There is no such feature in OneNote.

What you want to achieve can perfectly well be done with "Camtasia" from
TechSmith, a really professional tool for recording screen-activities
and corresponding audio recordings (f.e. lectures with PowerPoint).
There is a "trial", fully functional, only time limited:

P.S. When in TechSmith's site, don't miss to download the trial for
"SnagIt", a fantastic tool for screenshots and commenting images. A true
must for teachers/instructors
