I have a USB tablet, the Genius MousePen 8x6.
I have enabled the setting in the options for allowing Pressure-
Sensitivity.
I have windows xp media center.
All of the drivers are installed ok and pressure sensitivity in adobe
ps cs3 works fine.

How can I get the pressure sensitivity in OneNote to work?

That feature (and Tablet support in general) requires the Tablet PC version
of Windows XP, which is only available from OEMs when you purchase a Tablet
PC.

When you use an external writing tablet, OneNote will not be able to
perform handwriting recognition/indexing and will treat everything you
write as a picture. That setting about pressure sensitivity is related to
the Tablet PC support, and in your situation won't do anything. Sorry ;(
