every time I insert a greeting line it keeps coming out in japanese what do I
do to get it in english?

If you are using Word and the Japanese Greeting feature then that's what is
for, Japanese Greetings, and not for other languages.

If that's not what you are using then what application are you using and
what are you doing exactly?
