I am currently auditing my companies IT systems and have found license
information for everything other than a few computers and laptops that
had Microsoft Office XP licensed via Volume Licensing.

I only know that they were licensed using Volume Licensing due to old
audit records made by my predecessor and the fact that they all have
the same office key.

It seems that at some point prior to my starting with the company my
predecessor lost the printed records for these licenses - We have
other licenses registered on Microsofts EOpen site but no record of
any Office XP licenses

Does anyone know if Microsoft will keep records of Licenses registered
against a company and if so is there a number I can ring to ask for
them to send me the records.

Try running Belarc Advisor on the systems. that will give you the product
keys you need.

I have already managed to get the product keys - just need to get
proof that I we have the right to use them.
