In older versions of word when you clicked send as email it would convert
the word document as an email, but in word 2007 it sends the word document
as an attachment.

I wondered (probably a very stupid question) if it is possible to send as an
email the older (and better) way?

Yes, the command you want isn't in the Ribbon by default it's still
available. Right-click your QAT and selected "Customize Quick Access
Toolbar". In the "Commands Not in the Ribbon" category locate "Send to Mail
Recipient" and it to your QAT.
