Office 2007 will not convert

We installed the Office 2007 Professional trial and each application in the
suite has reduced functionality (grayed out). We uninstalled our earlier
Office XP suite to accommodate the trial installation; now we find we are
unable to get any work done because we cannot create new files or edit
existing files.

Is this typical, or is there a workaround to this issue?

What happens clicking on Office Button->Excel Options->Activate?
