Has anyone been able to download the Enterprise version via your MSDN
subscription? All I could see was Office Professional 2007 - no
Enterprise which means no GPO deployment. I heard Enterprise was only
on the MVL site. Is that true?

So far, yes.
My personal assumption is that MS hasn't posted the other SKUs yet in
order to avoid its servers from going down under the probably enormous
load.
Considering that Vista goes online Friday, I'd suspect that the other
SKUs won't be available until next week or even later.
