How do you keep signature single spaced in outlook?

Whenever I now got to send a message, my sig. is double spaced and I can not
seem to correct it.....

When you create it, try using a Ctl-Enter (line break, not paragraph break)
after each line.

I suspect you meant to type Shift+Enter since Ctrl+Enter is a shortcut for
sending the message?
