I would think the substitution is automatic. But , that may be too simple a
thought.

During the setup of Office 2007 you will be asked which of the "old" versions
you wish to keep and which to substitute.
You can also keep all of the old versions and use them side by side with the
new Office altough this CAN create a bit of a hassle.

So there isn't really a need to "delete" (I think you mean: uninstall) the
old Office before installing the new one.
You can however do this if you want to start again from scratch with Office
2007. To do so, enter the Control Panel (Start Menü / Settings / Control
Panel), select "Add or Remove Programs", search for the Office XP (or
whatever) entry and click "Remove" to uninstall it.
Note that this can lead to the loss of the settings you made to the Office
XP programs (such as manual auto-correction entries or changed orthography
settings). But if you don't mind this, you can safely uninstall, if you want.
As I said however, there is not real need to do this.

When you run the setup program for Office 2007, you will have a choice
of an Upgrade installation or a Custom installation. If you choose
Upgrade, then the setup program *should* automatically replace your 2002
programs with their equivalent 2007 versions (but it doesn't quite
always work that way). If you choose Custom, then in the Installation
Options tab you can choose which 2002 programs you wish to keep and
which 2002 programs you wish to replace with 2007 versions. You can
only have one version of Outlook installed, so you need to decide
whether you want the 2002 or 2007 version. You can have both 2002 and
2007 versions of the other Office applications installed side-by-side if
you want. Regardless of whether you choose an Upgrade or Custom
installation, at some point you may be prompted to insert your Office XP
CD to complete the installation, so be sure you have it handy before you
start.
