Mail.app new message fields

I've just started using Mail v2.0.2 that comes with Tiger. When I create
a new message the fields in the header (in order) are: To, Cc, Bcc,
Reply To, Subject and Account. Is there some way to display them in a
different order so I don't have to Tab four times to get to the subject
field?

you click on the letter icon next to Account (in the message panel).
Scroll down to customize and turn off the fields you don't want.

Look left lower of the message fields and see a little arrow. I dont
think you can change order but yu can delete/add. Anyway have a a play.
