There seems to be a complicated way to do it, involving something called DVD
Backup. Is there a simpler way to do this using iTunes?

iTunes or Quicktime pro will allow you to convert audio file formats.

I only own iTunes, and when I attempt to import, it just sees empty
directories. To be candid, I'd like David Byrne's "True Stories" on my
iPod. Not the actual album, but the movie, broken up into chapters. Sort
of like the soundtrack to Apocalypse Now.
