RAID and OSX

Does the RAID option in the OSX disk utility require that the whole
disk be included or can it just be applied to one partition? For
example if there are two 80G HDs installed and each one is partitioned
into two 40G sections can the raid be set up to mirror partition #1 of
disk #1 with partition #1 of Disk #2. I would like to leave the
remaining 2 partitions out of the RAID for use with OS9 and Virtual PC.

Is SOFT RAID able to do this better than the RAID option in disk
utility?

I don't have a new Mac yet but I am trying to do some planning ahead.

Apple's OS X RAID can't do that but SoftRAID says it does.
