So many hardware choices. :) The good thing is that they're all decent. I don't think you'll consider any of the new models a mistake, though some certainly suit better uses than others.
Once you get past the hardware decision, the software will be important too. Take a look at the drawing apps made specifically for the Tablet PC, like
